    Concealed Weapons - This course consists of four hours of classroom instruction and four hours of handgun training in an indoor firing range. Topics covered include firearms handling and safety, ammunition, how to select and store a firearm, NC laws concerning carrying a concealed weapon, and shooting fundamentals. Registration deadline is 12:00 noon on the Wednesday prior to start date. Ten slots available in each class. Enhance Your Handgun Skills Required: Students registering for this course must possess and provide a card copy for either the concealed carry permit or an NRA Basic Pistol course. Students need to bring their own handgun and holster and 50 rounds of ammunition. This four-hour course will instruct students on how to more effectively operate a handgun to increase both safety and confidence. Indoor target practice will include state-of-the-art exercises in timed-shooting, multiple shooting, and moving target shooting. Register early! Only six slots available for each class. Registration deadline is seven days prior to the start date.

With personal feedback and assistance from Chef Frank, students will acquire hands-on experience executing culinary techniques and recipes, learn fundamental culinary skills and concepts, knife handling, how to create sauces, salads, stocks, roasting & grilling, and more. All classes meet from 6:30 pm - 9:30 pm on Tuesdays in the Business & Industry Center, Room 1163. Students need to bring a chef's knife and paring knife. January 10 Knife Skills Sharpen your knife skills by learning inside secrets to perfecting your julienne, chiffonade, chop, slice and dice. This class will teach you about knife selection, knife sharpening and cutting techniques. This class will revolutionize the way you use this kitchen tool.
